My boys ask for pancakes every week, if not more! This recipe is adapted from the childhood recipe my mom made regularly when I was little. Growing up, I remember my mom cooking these on the weekends. My siblings ate them with syrup, but I would just add butter and roll them up to eat them. I am happy to note the love for these pancakes lives on in my family!
These pancakes are so easy to make! My boys love to help out, so they usually alternate adding the dry ingredients to the bowl and we all take turns whisking the batter! We like to turn on the radio and sing and dance while taking turns stirring the batter!
Have fun with the toppings! Our favorite toppings for these pancakes include: butter, syrup, peanut butter and jelly, whipped cream, and fresh fruit! Only when my husband is eating breakfast with us on the weekends do the boys get syrup on their pancakes. I try to avoid syrup because of all the random sticky splotches around my kitchen that inevitably comes from toddlers eating pancakes and syrup, so needless to say the boys love when Daddy is home for breakfast!
Bonus Tip: I make these pancakes regularly and freeze the leftovers in between squares of parchment. Pop them in the toaster and it’s a quick midweek breakfast! My kids even enjoy these pancakes plain for a quick and clean snack in the car.

- 2 eggs
- 2 c milk
- 6 T greek yogurt strawberry greek yogurt is a favorite in my house
- 4 T melted butter
- 2 c flour
- 1 tsp salt
- 2 Tbs sugar
- 2 Tbs baking powder

- Heat an electric griddle to 350° or a stovetop griddle on medium-high heat
- We'll be using a bowl and a whisk for this recipe. Keepin' it simple.
- Melt the butter on the stove.
- Combine the milk, yogurt, and egg in a large mixing bowl.
- Add the melted butter to the mixing bowl.
- Whisk the ingredients together.
- Add the flour, salt, sugar, and baking powder to the mixing bowl.
- Whisk all ingredients together.
- Use a 1/4 cup measuring cup to portion out pancakes on the griddle.
- When the bubbles on the pancake stop closing, it's time to flip!
- Repeat until the batter is gone.
- Topping options are unlimited! Favorites include: syrup, peanut butter & jelly, whipped cream, and applesauce. Enjoy!
